Fluffy White Frosting - a trigger buster for sure!
Combine in the top of a double boiler:
3/4 cup sugar
1/4 cup corn syrup
2 tbsps. water
2 egg whites
1/4 tsp. cream of tartar
1/4 tsp. salt
Cook over rapidly boiling water while beating with an electric hand mixer until peaks remain standing on their own.
Remove from heat.
Add 1 tsp. vanilla and continue beating until thick enough to spread.
ENJOY on cupcakes, cakes, bread etc.

Quick and Easy Chocolate Frosting - my favourite trigger balm!
1. Melt 2 squares of baking chocolate in the top of a double boiler.
2. When the chocolate is melted, add 6 tbsps. light cream and 3 tbsps. butter.
3. Stir until smooth and slightly thick.
4. Remove from heat.
5. Add: 31/2 - 4 cups sifted icing sugar all at once
1/8 tsp. salt and 1 tsp. vanilla
6. Beat! -- If it becomes too thick to spread, thin with a few drops of cream.
I especially enjoy this one one bread, like nutella! But you will have enough for a cake or cupcakes as well!
These delights will help you to beat those nasty down days even when they are caused by triggers to your PTSD. Stay well.
