One Way to Heal Your Adytum:
Cook for someone you love! That someone could even be you. But if you have symptoms of PTSD, the other people around you need some nourishment too.
This is one of my mother’s recipes and she taught me that cooking for someone you love (even yourself) is a good way to find a sense of awe and reverence for the privilege of being alive.
Feel Good Banana Pudding
Ingredients: ½ cup + 1/4 cup sugar (separate)
2 tbsp. flour
¼ tsp. salt
2 cups milk
3 eggs, separated
1 tsp. vanilla
vanilla wafers
6 bananas
Directions:
Combine ½ cup sugar, flour and salt in the top of a double boiler; stir in milk. Cook over the boiling water, stirring constantly, until thickened. Cook, uncovered, 15 minutes more, stirring occasionally. Remove from the heat. Beat egg yolks; gradually whisk into hot mixture. Then return the mixture to the top of the double boiler and cook for 5 minutes, stirring constantly. Again remove the mixture from the heat and add vanilla.
Line the bottom of a casserole with vanilla wafers. Top the wafers with a layer of sliced bananas. Pour a layer of custard over the wafers and bananas.
Continue to layer wafers, bananas and custard ending with a layer of custard on top.
Beat the egg whites until they are stiff, but not dry; gradually add the remaining ¼ cup sugar and beat again until mixture forms stiff peaks. Pile the beaten egg whites on top of the custard in the casserole. Then place additional vanilla wafers around the edges of the casserole.
Bake at 425F for 5 minutes or until delicately browned.
